Apple pie, what better to do in winter when we are forced to stay indoors? Here we present our classic recipe, with apple slices to cover this wonderful cupboard dessert. We advise you to use our 1 kg Anima di Pasticceria flour for soft cakes and tarts, which you can find in shops and supermarkets.
Ingredients for 8 people.
200 g of Anima di Pastry flour for soft cakes and tarts
100 g of sugar,
150 g of butter,
1 untreated lemon (zest and juice),
1/2 sachet of baking powder,
1 pinch of salt,
4 Renetta apples.
To complete: 1 tablespoon of brown sugar, 1/2 tablespoon of ground cinnamon, a little butter and flour for the pan.
Remove the eggs from the fridge in time to have them at room temperature.
Peel the apples, cut them into regular chunks and sprinkle them with lemon juice.
Grease and flour a round pan 24 cm in diameter. Sift the flour with the baking powder and salt. Put the butter, soft and into small pieces, in a bowl and work it with a wooden spoon, together with the sugar and grated lemon zest, until the mixture is puffy and fluffy. Add the whole eggs, one at a time, not adding the next one until the previous one is well blended. Finally add the flour, mix well and pour the mixture into the pan. Arrange the apple chunks thickly on the surface, sprinkle them with the mixed sugar and cinnamon and place the cake in the oven at 180 °, letting it cook for about three quarters of an hour.
Serve warm or cold, perhaps with a little vanilla ice cream or hot custard.
